In late September 2007, Must Winebar opened Perth’s first Champagne room. No more than 30 guests can be accommodated in the suave space, which is plushly decorated in hues of black and gold.

The wine list features up to 50 Champagnes. In the exclusive line-up is the highly sought after Dom Perignon Oenotheque; Salon, which has only been available in Perth for six months; and Billecart Salmon, which is exclusive to Must.

While only Champagne can be bought by the glass, a handful of international sparkling wines are available by the bottle and spirits such as cognac, armagnac and top shelf scotches are also on hand.
