Bean and Potato Frittata

makes 4

ingredients
1 tbsp oil
1 onion, chopped
1-2 rashers bacon, chopped
½ red capsicum, chopped
220g can Heinz Baked Beans in Ham Sauce
6 eggs, lightly beaten
2 tbsp fresh parsley, chopped
½ cup tasty cheese, grated

 



method
Heat oil in a medium non-stick frying pan. Cook onions for 2-3 minutes, or until golden.
Add the bacon and capsicum and cook for a further 2 minutes.
Stir through the Heinz Baked Beans.
Combine eggs and parsley. Pour egg mixture gently over the bean mixture.  Top with cheese.
Cook over low heat for 5 minutes, or until base is set. Finish under a preheated grill for a further 3-4 minutes, or until set and top golden.

To serve
Serve either hot or cold, cut into wedges. Accompany with a crisp salad.
