Easy Vegie Slice |

![]() makes 4 ingredients 4 slices of wholemeal bread 1 tablespoon of poyunsaturated margarine 4 lean slices of ham 1 small onion 1 small zucchini 1 tablespoon self raising flour 2 teaspoons of finely chopped parsley 2 eggs 1/3 cup grated reduced fat cheese method Cut the crusts off the bread and spread bread lightly with margarine. Arrange spread side up on the bottom of a a shallow microwave safe dish. Cut up the in small pieces and put in a bowl. Grate the onion and zucchini using the large holes on grater, add to ham. Add eggs, flour, parsley and cheese and stir well. Use a fork so that egg is beaten well. Spoon mixture over bread. Cover with plastic wrap. Microwave on MED-HIGH for 8 minutes. Serve hot or cold. |
